Lemon Cupcakes with Lemon Cream



White cake mix with lemon pudding, lemon zest, lemon extract, lots of good vanilla. A lovely, fresh tasting cake.



The frosting is pretty fragile and needs chilling to set up. It's cream cheese, butter, lemon, more zest, sugar, vanilla, oh MY. This was nicely rich without being too sweet. Gorgeous with coffee.

of all the ice cream favorites, vanilla is always the favorite. As a background note to these lemon lovlies, I can imagine how good they taste. And with coffee, well, heaven! The picture is so pretty, too.
