Grown-up cupcakes. Frosting is a delicious cream-cheese-based mocha, flavoured with espresso, vanilla, etc....yum.


This was swirled onto Spice cakes, and Cappuccino Chip cakes.

Chocolate Italian Meringue Buttercream (on chocolate cupcakes)


Well, I finally got brave enough to try a meringue buttercream frosting - I've never attempted this style of recipe. It's stiffly beaten egg whites, with boiling sugar syrup slowly added, then sweet butter beaten in a chunk at a time. I added melted bittersweet chocolate, plus some dark cocoa to balance out the texture/flavour.


Holy Cow.

This is some good stuff. I didn't have it at the right temp, so my swirls broke up a little. However, the taste & texture are superb; silky and melting.

Made especially for my friends Emma (10) and Chloe (7). They're having a sleepover party tonight. I sure hope they like these!

Another recipe from the Cake Mix Dr....this one's peanut butter cake, very fine crumb and quite moist. So delicious. Extra vanilla added, of course. Chocolate cream frosting with lots of bittersweet chocolate, cream cheese, and a dollop of creamy peanut butter. Decadent and wonderful

Lemon Cupcakes with Lemon Cream



White cake mix with lemon pudding, lemon zest, lemon extract, lots of good vanilla. A lovely, fresh tasting cake.



The frosting is pretty fragile and needs chilling to set up. It's cream cheese, butter, lemon, more zest, sugar, vanilla, oh MY. This was nicely rich without being too sweet. Gorgeous with coffee.

Peanut Butter Cupcakes


I was jonesing for a PB and Chocolate fix, it was kind of urgent.

The Cake Mix Doctor Chocolate Cookbook had an amazingly simple recipe for PB & Choc 'muffins'. I cupcake-ified them by using snazzy foil liners, and dipping them in ganache before drizzling with PB glaze. Good grief. Semisweet & PB chips in the batter. Too good for words.

Love Heart Cupcakes


Valentine's Day in the sixties meant two things; hokey, sweet Valentines with bad puns, usually cut from a book, and Love Hearts candies, with their sweet sayings.

When I found a package of Love Hearts, they just cried out for a cupcake.

Triple Chocolate Cupcakes


I just had to try another recipe from this book; (The Cake Mix Dr Chocolate)...the PButter Choc ones were so outstanding. I had lots of chocolate mixes on hand, so chose this rich, dark cake with mini choc chips in the batter.Luscious chocolate flavour, soft but dense cake, quite lovely. Made a frosting of cream cheese, butter, semisweet chocolate and condensed milk; it was nice and smooth due to the lack of icing sugar. Very yummy, and after cooling for a bit, it piped nicely.
